Sweet Chilli Chicken

Description:
A succulent chicken dish, which is lightweight but also full of flavour. You can add any extra vegetables for extra nutrition.
Ingredients:
- 400g chicken thigh fillets, diced
- 2 tsp soy sauce
- 1 tsp cornflour
- 1 tbsp sunflower oil
- 2 garlic, thinly sliced
- 1 carrot, thinly sliced
- 350g frozen broccoli
- 100ml sweet chilli sauce
Add 250g rice and thinly sliced spring onions.
Method:
- Marinade the chicken in the soy sauce and cornflour and set aside for at least 5 minutes before cooking.
- Heat a frying pan over medium heat and add the oil. Once the pan is very hot, fry the chicken until golden and remove from the pan.
- Turn the heat up to high and stir fry the garlic, carrot and frozen broccoli with a splash of water for 4 minutes. Add in the sweet chilli sauce and chicken and allow to simmer for 5 minutes.
- Serve the sweet chilli chicken with steamed rice and spring onions.
